Which operating system is recommended? What is the difference between the Home and Pro version of Windows? Is there an easy way to restore/reinstall Windows?

For most users, Windows 10/11 Home is sufficient. You would need the Pro edition if you want native disk encryption from the OS which we do not recommend unless you have a specific use-case for it because we have encountered numerous situations where users lost their data as they forgot or misplaced their encryption key or due to an unplanned need to format the drive and reinstall the OS.

The other benefit of the Pro edition is the Group Policy Editor which allows you to change various settings easily without the need of registry tweaking such as disabling Cortana, OneDrive, Windows Spotlight, Customer Experience Improvement Program.
